One way is to make sure that leftovers are used, and left in the back of the fridge to turn in to a science experiment. I am really bad at making sure leftovers are used, so I went looking for ideas. Here are two I came across a few years ago, and thought they were worth taking another look at.
Healthy Skillet Dishes
What is a Skillet Dish? A Skillet Dish is one-dish meal (usually) that incorporates healthy sources of protein, starches/grains, sauce (for flavor and moisture) and other add-ins. It doesn’t have to be made in a skillet, though. You could use a crockpot or a stew pot. But the idea is that you’re making one dish that satisfies all the dietary needs of a given meal, while enjoying endlessly satisfying variety.
Basically, a casserole. You can use leftovers or whatever happens to be on sale that week. The possibilities are endless.

I've been making a lot of soups with leftovers. Just add broth or tomato juice and some extra veggies. You can also add rice, barley, noodles, whatever sounds good. The kids now ask me to make Spaghetti Soup on purpose. (It never comes out the same way twice. LOL)
